ingredients

  • 2-3 pounds chicken breast, cooked and cut
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 3 tablespoons shortening
  • ½ cup onion, chopped
  • 1 can chopped tomatoes
  • 1 clove garlic
  • 1 cup tomato juice
  • 2 cups chicken broth
  • 1 cup uncooked rice
  • 2 cups frozen peas
  • ¼ cup pimento

directions

1. Brown chicken in shortening and use seasonings.
2. Add onion and garlic and cook until tender.
3. Add tomatoes and juice and 1/2 cup chicken broth. Cover and simmer 20 minutes.
4. Add rice and remaining broth. Simmer uncovered 20 minutes. Add chicken, peas, and pimentos. Simmer until peas are tender and most of liquid is gone.
