ingredients

  • 1 pound sweet Italian sausage, chunked
  • 1 pound hot italian sausage, chunked
  • 1 pound sweet potatoes, unpeeled, cubed
  • 1 pound red potatoes, unpeeled, cubed
  • 1 pound red pepper , chunks
  • 1 pound green onion, chunks
  • 1 pound carrots, chunks
  • 1 pound zucchini, thick slices
  • 1 pound yellow squash, thick slices
  • 1 large onion, sliced thick
  • ½ head garlic, minced
  • salt and pepper
  • oil

directions

1. Drizzle bottom of roasting pan with oil.
2. Combine all and bake at 350 for 1-2 hours.
3. Veggies should be caramelized at edges and sausage should be cooked throughout.
4. Cook covered with foil.
