ingredients

  • ½ cup margarine/shortening
  • 1 cup brown sugar
  • 2 eggs
  • 1 cup pumpkin
  • 2 cups flour
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 3-4 teaspoons pumpkin pie spice
  • ¼ stick butter
  • ¼ block cream cheese
  • powdered sugar

directions

1. Mix shortening, sugar, and eggs.
2. Stir in pumpkin.
3. Stir in dry ingredients.
4. Chill 1 hour.
5. Drop by large, flattened spoonfuls. Bake at 375 for 6-8 minutes or until set.
6. After cooling, frost (beat together butter, cream cheese, and enough p. sugar to make icing).
