ingredients

  • 3 eggs
  • 1 cup sugar
  • cup pumpkin
  • 1 teaspoon lemon juice
  • cup flour
  • ½ teaspoon ginger
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 6 oz cream cheese
  • 4 tablespoons butter
  • ½ teaspoon vanilla
  • 1 cup powdered sugar

directions

1. Preheat oven to 375. Grease cake pan and line with wax paper.
2. Beat eggs for 5 minutes. Stir in sugar. Add pumpkin and juice.
3. Add dry ingredients. Cook for 10 minutes.
4. While cooking, place towel on counter and sprinkle with powdered sugar.
5. Flip cake on towel. Roll from thinnest end and cool. Unroll and spread on icing.
6. Reroll and store in refrigerator.
