ingredients

  • 1 ½ cups oil
  • 2 cups sugar
  • 3 eggs
  • 2 cups grated carrots, (1 pound)
  • 1 cup drained pineapple, save juice
  • 1 cup raisins
  • 2 ½ cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 teaspoons cinnamon
  • 1 teaspoon vanilla
  • cream cheese
  • powdered sugar
  • butter

directions

1. Cream oil, sugar, and eggs.
2. Add carrots, pineapple, raisins.
3. Sift and add dry ingredients slowly to mixture.
4. Add vanilla and beat until well blended.
5. If too dry, add juice.
6. Pour in pan and bake at 350 for 45 minutes or until toothpick is clean.
7. Frost with cream cheese frosting (cream cheese, powdered sugar, butter).
